Required products :

  • 2 small bagels
  • 80 milliliters of olive oil
  • 1,200 kg white canned beans (drain the water and dry the beans)
  • 300 milliliters of cold pressed olive oil
  • 2 cloves garlic, cut into quarters
  • the juice of 1 lemon
  • 1 cup fresh oregano leaves
  • 1 tablespoon Dijon mustard
  • 1 teaspoon capers (drained of water)

Method of preparation :

Preheat oven to 180 degrees. Cut the bagels at an angle into thin slices and arrange them in a tray. Sprinkle with olive oil and sprinkle with salt and pepper to taste. Bake them in the oven for 10 - 15 until golden and crispy. Remove from the oven and allow to cool. Store in a tightly closed container.

Pour the beans into a deep bowl, add 200 milliliters of cold pressed olive oil, garlic and lemon juice. Puree until smooth, season and refrigerate.

You should make a sauce of oregano, mustard, parsley, capers and the remaining olive oil. Mix the products and grind them until smooth.

It's time to serve. Put a spoonful of bean puree on a plate, sprinkle with a little sauce and serve with toasted slices.

Instead of canned white beans you can use dry: first soak it in water for 24 hours, then boil it, adding a bouquet of garnishes (mix of aromatic roots or spices wrapped in gauze), garlic, thyme and rosemary. Put salt at the end.
