Required products :

  • 50 grams of salted unsalted pistachios
  • 170 grams of white chocolate + another 70 grams for the glaze
  • 90 milliliters of liquid cream with 35% fat
  • 30 grams of butter
  • pistachio essence
  • candied cherries and strawberries / jam from them

 

Method of preparation :

Dry the pistachios in the oven for 10-15 minutes. Allow them to cool, then finely chop half of them and cut the rest.

Melt 170 grams of chocolate in a water bath.

Mix the cream with the ground nuts and place on the hob. Heat almost to boiling, but do not allow the liquid to boil. Add it to the chocolate and stir.

Add a few drops of essence, butter (pre-softened) and mix thoroughly again.

The combination should be cooled to room temperature, then refrigerate for 1.5-2 hours.

If the fruit is large, cut it into cubes about 5 millimeters long on the side.

When you take the cream out of the fridge, scoop it out with a teaspoon and form truffles, in the middle of which put a piece of fruit.

Put the finished candies in the freezer for half an hour.

Meanwhile, melt the remaining chocolate (provided for the glaze) again in a water bath. It is important when you remove the pan from the heat, because the chocolate will change its consistency if you heat it for a long time, and it will spread.

Put a little of it on each truffle, sprinkle with the remaining pistachios. Arrange them in a container that closes tightly and store in the refrigerator until firm.

Take out the greed for 20 minutes before you submit.
