Necessary products:

250 grams of white fish fillet

salt and freshly ground black pepper - to taste

2 tablespoons olive oil

1 medium onion head

1 red sweet pepper (80-90 grams)

20 ml of dry white wine

green lemon for decoration

For the sauce:

2 egg yolks

1 tsp olive oil

1-2 tsp green lemon juice

1-2 tsp mint

Method of preparation:

Important: do not thaw the fillet in water, because the fish loses a significant part of its qualities. It is best to let it thaw in the refrigerator (slowly, but you will get a tastier dish).

Let's move on to cooking. Start with the sauce: in a bowl of a water bath, beat the yolks, adding olive oil. Beat until you get a thick foam, then add the finely chopped mint and lemon juice. The sauce is ready.

Here is the main part of the dish: cut onions and peppers into large circles 2-3 cm thick. Season the fillet with salt and pepper. Fry the vegetables in olive oil first (be careful not to burn them), then the fillet skin side down. Fry for about 1 minute and turn on the other side. Add the white wine and leave on the stove until the fish is ready. The most important thing is not to burn it, because it will be dry.

Put the vegetables (with the top) in the middle of the plate and the finished fillet on top. Drizzle with the sauce and garnish with a slice of green lemon.
