Beat the eggs with a fork, add the chopped parsley, spinach, salt and stir.
Grease pots or suitable portion bowls with olive oil, distribute the fish, whole cherry tomatoes and olives in them.
Cover with grated yellow cheese and pour the mixture of eggs, spinach and parsley.
Bake the dish for about half an hour in the oven at 200 degrees.
