How To Cook White Fish With Zucchini In Parchment - Recipe

Required products :

  • 500 grams of yogurt
  • 1/2 bunch mint, chopped leaves in bulk
  • 1 teaspoon hot red pepper flakes
  • 2 lemons - grated rind of one and squeezed the juice of both
  • 2 fillets of 200 grams of white fish
  • 2-3 long zucchini, cut into strips with a peeler lengthwise
  • 2 tablespoons olive oil
  • parsley for serving

Method of preparation :

In a food processor, puree the yoghurt with the mint, hot pepper, lemon zest and juice. Forge.

Marinate the fish fillets with half of the resulting mixture, cover and refrigerate for 10 minutes.

Season the zucchini strips with salt and leave for 1-2 minutes.

Remove the fillets from the marinade.

Arrange 6-8 strips of zucchini next to each other, slightly overlapping them, put the fillet on top and wrap in the zucchini.

Preheat oven to 200 degrees.

Cut 4 rectangles measuring 30 by 40 centimeters and fold them in half. Open the leaves and place the fillet in the center of the fold. Spread some of the marinade, pour olive oil and cut the edges of the leaves into a circle. Cut in a circle the second sheet, which you place on the fish and fold the edges to close the fillet tightly between the two sheets of parchment.

Transfer to the pan and make the second fillet in the same way.

Cook for 8-10 minutes. Remove the bags from the oven and wait 2-3 minutes.

Put in a pan and carefully cut off the top of the paper to serve in it like in bowls. Drizzle with a little lemon juice.
