Peel the ginger and garlic, grind them to a smooth paste in a blender together with 2 tablespoons of tomatoes.
Clean the mushrooms well, cut them into large pieces and pour into a pan with the fat. Fry them, stirring, until the liquid evaporates.
Transfer the mushrooms to a plate and fry the fennel seeds in the same fat for 10 seconds. Then add the tomato paste, remaining tomatoes, spices and salt to taste.
Cook, stirring, for 5 minutes and then return the mushrooms to the pan. Stir, reduce the heat and leave the dish under a lid for another 10 minutes.
