Necessary products:

 

for swamps:

 

  • 2 egg yolks
  • 2 proteins
  • 200 grams of sugar
  • 10 grams of baking powder
  • 1 and 1/2 teaspoon flour
  • 1/2 teaspoon oil
  • 1 ampoule of vanilla essence
  • pinch of salt

 

for cream:

 

  • 150 milliliters of whipping cream
  • 100 grams of sour cream
  • 1 teaspoon powdered sugar
  • 200 grams of fresh strawberries

 

for the couverture:

 

  • 250 grams of white chocolate
  • 4 halved fresh strawberries
  • 1-2 teaspoons liquid dark chocolate

 

Method of preparation:


Beat with a mixer first the egg whites, sugar, vanilla, and then the yolks mixed with the oil. Sift the flour with a bowl, add the baking powder and salt. Combine the mixtures, mix until homogeneous and pour the dough into a parchment-lined tray.

Preheat oven to 170 degrees and bake for 30-35 minutes. Allow to cool and make a cream during this time. Finely chop the strawberries and add the powdered sugar. Whip the cream and combine with the fruit. Mix well and cool.

Put the marshmallows on baking paper, spread it with the resulting mousse, roll gently, wrap the edges and put in the refrigerator for an hour. Then melt the white chocolate in a water bath, place the roll on a kitchen rack and glaze. Garnish with strawberries and liquid chocolate. Cut and serve the roll cold.
