Required products :

  • 500 grams of wholemeal flour
  • 1 teaspoon salt
  • 2 teaspoons dry yeast
  • 30 grams of butter, cut into cubes
  • 75 grams of warm milk (+ more to spread)
  • 225 milliliters of warm water
  • 25 grams of oatmeal
  • 35 grams of raisins
  • 2 tablespoons sesame seeds

Method of preparation :

Combine the flour with the salt and yeast in a large bowl. Add the butter (it should be cold) and rub it into the dry ingredients with your fingers to get crumbs. You should mix the two liquids - milk and water, and add them to the flour, mixing well with a spoon to get a soft dough.

Transfer to a well-floured surface and continue to knead for 10-25 minutes until an elastic dough is obtained.

Cover and leave to rise until doubled in about an hour.

When the dough is ready, press it with your fist in the center to drop, and knead the raisins in it. Divide the dough into 8 balls, which you shape into rectangles.

Arrange them in a large tray with enough space between them. Cover them again with a sheet of foil and leave to rise again for an hour until they double.

Spread a little milk on the shaped loaves and sprinkle with sesame and oatmeal. Bake in a preheated 200 degree oven for 10-15 minutes until done.
