To save time preparing for this quick mini pizza recipe, use lyutenitsa or tomato sauce and wholemeal sandwich bread instead of pizza dough. Be creative with the garnish. Serve to your children as a healthy lunch after school. Try broccoli and mushrooms or pieces of ham and pineapple.

Necessary products for 2 mini pizzas :

  • 1 wholemeal bread or parlenka
  • 2-4 tablespoons lyutenitsa or tomato sauce
  • 1/2 zucchini (cut into thin circles)
  • 1 tomato (cut into circles)
  • handful of mozzarella or yellow cheese (grated)

Method of preparation :

Preheat oven to 180 degrees.

Cut the wholemeal bread in half. If you use wholemeal parlenka, there is no need to cut it. Then spread with lyutenitsa or tomato sauce. Arrange the zucchini and tomato slices on top. Sprinkle with mozzarella or yellow cheese.

Bake the mini pizzas for 10-12 minutes in the oven. Garnish with fresh basil leaves.
