How To Cook Wholemeal Muffins With Carrots, Bran And Oatmeal - Recipe

Required products (for 10 pieces) :

  • 1 teaspoon wholemeal flour
  • 125 grams of natural yogurt
  • 1 small carrot
  • 1 small apple
  • 2 tablespoons bran
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1 teaspoon vegetable oil
  • oatmeal for sprinkling
  • a pinch of soda

Method of preparation :

Wash the carrot, peel it and cut into large pieces. Grind it with a blender, you should get pieces the size of a pea. Wash the apple and grate on a fine grater to obtain a puree.

In a deep bowl, mix the sifted flour together with the cinnamon and baking soda, add the yoghurt (or apple juice if you are fasting) and stir. Then add honey, apple puree, carrot and bran. Mix everything, cover the dough with a towel and leave for 10 minutes. Then add the oil.

Grease the molds you will use with oil (if they are silicone, this is not necessary) or prepare paper ones. Spread the dough in them, sprinkle with oatmeal and bake in a preheated oven to 180 degrees for 45 - 50 minutes.
