Required products :

  • 4 slices wholemeal bread
  • 2 avocados
  • 90 grams of sour cream with 20% fat
  • 1/2 lemon
  • 4 eggs
  • 2-3 mint leaves
  • 30 grams of dried tomatoes


Method of preparation :

Bake slices until crispy. You can use a toaster or put them in a hot dry pan for 2-3 minutes on each side over high heat.

Peel an avocado, cut it into cubes, pour into a blender, add the mint leaves (chopped) and cream. Pour 1 tablespoon of lemon juice (or to taste), puree and add salt. The mousse is ready.

Bring 1/2 liter of water to a boil. When this happens, start mixing with the wire to break the egg liquid. In the "funnel" formed, beat an egg (you can beat it in a sieve beforehand, so most of the egg white will run out and you will prepare only the yolk, but try to keep it whole). Cook for 1-2 minutes and remove with a slotted spoon.

Prepare the other eggs in the same way.

Spread the toasted slices with the avocado sauce, sprinkle with sliced ​​sun-dried tomatoes and place one egg on each.

Garnish with pieces of sun-dried tomatoes and serve immediately.
