Required products :

  • 2 tablespoons olive oil
  • 4 cloves garlic, peeled and finely chopped
  • 1 onion, chopped
  • 125 grams of shiitake mushrooms, washed and chopped
  • 20 grams of dried mushrooms
  • 225 grams of raw couscous (Israeli)
  • 700 milliliters of vegetable broth
  • 2 tablespoons chopped basil
  • salt and pepper to taste

Method of preparation :

Heat olive oil and fry onion and garlic in it for 3 minutes. Add the chopped mushrooms and cook for another 5 minutes. Add the broth and mushrooms, wait for the liquid to boil.

Add the couscous and reduce the heat. Cover with a lid and cook until the couscous is ready (until the liquid is absorbed). This takes about 10 minutes. Remove the lid and cook for another 5 minutes.

Season to taste.

Just before serving, add the basil.
