Method of preparation :
Pre-soak the beans for 6-8 hours in water, then cook until done. Peel the aubergines, cut them into cubes. Grate the carrots and cut the peppers into straws. Mix the prepared vegetables and add to them the garlic, peeled and mashed, finely chopped hot peppers, sugar, salt. Pour the vinegar and oil and mix everything. Put on low heat and let simmer for 30 minutes. Then pour the beans over the vegetables, add spices as desired and to taste and stew for another 5 - 10 minutes (or until all the products are fully cooked).
Distribute the salad in sterilized jars and close. Cook for about 10 minutes (for a lid).
