Required products :

  • 4 yellow apples
  • 2 medium onions
  • 3 carrots
  • 3 potatoes
  • 2 eggs
  • 1.5 liters of chicken broth
  • 80 grams of bacon
  • croutons
  • vinegar
  • olive oil
  • left

Method of preparation :

Boil the eggs hard (12 minutes), adding a pinch of salt and a little vinegar to the water. Then place in a bowl of cold water and when cool, peel and cut into circles.

Finely chop the carrots, apples and onions. Peel the potatoes, cut them into cubes.

Stew onions and carrots in 3 tablespoons of olive oil, add apples, potatoes, stew everything for 5 minutes and pour the broth.

Close the pan with a lid and let the soup cook on low heat for 20-25 minutes (until the vegetables are ready).

Then puree with a blender and add salt to taste.

Serve with boiled eggs, croutons and chopped bacon. You can sprinkle with chopped parsley.
