  • 1 tablespoon flour
  • 180 grams of raw chorizo ​​sausage (removed from the peel)
  • 2 green onion stalks, finely chopped
  • 1 hot jalapeno pepper, finely chopped
  • 1/4 tea cup fresh coriander, finely chopped

  • tomato salsa for serving

for potatoes:

  • 6 small potatoes
  • 2 tablespoons olive oil

Method of preparation :

In a large bowl, place the flour and grated cheese.

Fry the chorizo ​​in a saucepan, breaking it into crumbs. When it becomes crispy and golden, transfer with a slotted spoon on paper to remove excess fat.

Return the pan to the hob and fry the onions and peppers for 1-2 minutes together with a little salt and coriander. Pour the beer, stirring constantly, and when it boils, add the cheese in portions, stirring to melt. Finally, put half of the chorizo.

Prepare the potato shells - pierce the potatoes with a fork and heat them in the microwave for 5 minutes. Transfer them to a pan and bake for 10-15 minutes at 220 degrees.

When cool, cut them lengthwise. Carve the inside, leaving about 5-6 millimeters of shell. Spread with olive oil and bake for 10-15 minutes until crispy, season with salt.

Sprinkle the yellow cheese sauce with the remaining chorizo ​​and tomato salsa, serve with the potato shells.
