How To Cook Zucchini Cake With Cottage Cheese And Dried Tomatoes - Recipe

Required products :

  • 1 kg of zucchini
  • 100 grams of dried tomatoes
  • 3 eggs
  • 3 tablespoons flour
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 250 grams of cottage cheese
  • 1 clove garlic
  • parsley to taste
  • 2-3 tablespoons sour cream
  • frying oil

 

Method of preparation :

Grate the zucchini coarsely (if the skin is thick, peel it; if there are seeds in the core, remove them beforehand). Leave for 15 minutes, then squeeze them out of the liquid. Add eggs, salt, flour, pepper, garlic and parsley, stir.

Heat a greased pan, bake golden pancakes from the dough in it, putting a thin layer of it in the pan. Level the surface with a silicone spatula.

Mash the cottage cheese with a fork together with the cream, salt to taste and chopped sun-dried tomatoes.

When the pancakes have cooled, arrange them on top of each other, spreading the resulting cream between them.

The summer cake is ready, it is served chilled.
