How To Cook Zucchini In The Oven With Tomatoes And Potatoes - Recipe

Required products :

2 zucchini
2 peeled potatoes
3 large tomatoes
1 large onion (sweet variety)
2 cloves garlic (finely chopped)
2-3 tablespoons olive oil
salt and ground black pepper to taste
1/2 teaspoon vegetable seasoning
1/2 teaspoon grated yellow cheese

Preparation :
Preheat the oven to 200 degrees, grease a suitable baking dish with olive oil.
Cut the onion into semicircles and fry it in olive oil over medium heat for about 8-10 minutes. Then add the garlic and after a few minutes pour them into the pan. Spread evenly on the bottom of the dish and sprinkle with vegetable spices.
Wash potatoes, zucchini and tomatoes under running water, dry and cut into circles about 8-10 millimeters thick. Arrange them on the onions, alternating them and forming a dense spiral (one layer). Sprinkle with spices to taste and pour olive oil (about 2 tbsp).


Cover with foil and bake for about 35 minutes (or until potatoes are ready).
Then remove the foil and spread the grated yellow cheese evenly on the surface of the dish. Return to the oven to bake the coating until golden.


Serve the vegetable temptation hot.
