How To Cook Zucchini, Mozzarella And Basil Frittata - Recipe

This vegetable frittata is one of the fastest dishes you can prepare for breakfast, lunch or dinner with a garnish of fresh salad and baguette sprinkled with olive oil.

Required products :

  • 2 tablespoons extra virgin olive oil
  • 1 and 1/2 cups red onion, thinly sliced
  • 1 and 1/2 cups zucchini, cut into cubes
  • 7 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2/3 cup baby mozzarella in balls
  • 3 tablespoons dried tomatoes, finely chopped
  • 1/4 cup fresh basil, thinly sliced

set (optional):

  • mallow leaves
  • radishes

* A tea cup is used to measure the quantities.

Method of preparation :

Place the rack on top of the oven and heat to a high temperature.

Heat 2 tablespoons olive oil in a large cast iron skillet over medium heat. Fry the onion and zucchini in it, stirring often for 3 to 5 minutes or until soft.

Beat the eggs, salt and pepper in a bowl. Pour and spread the egg mixture evenly over the vegetables in the pan. Cook for about 2 minutes. Arrange the mozzarella and sun-dried tomatoes on top and put the pan in the oven, bake for 1-2 minutes or until browned. Remove from the oven and let stand for 2-3 minutes.

Sprinkle with basil, cut the frittata into 4 pieces and serve with a garnish of radishes and matula.
