Necessary products:

 

  • 1/2 cup walnuts
  • 1 large zucchini
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 50 grams of arugula
  • half a lemon, finely chopped
  • juice of half a lemon
  • salt and pepper
  • 1/3 tea cup grated Parmesan cheese

 

Method of preparation:

 

Wash and dry the zucchini. Grate it on a grater and drain the excess water. Put it in a blender and add the walnuts, garlic cloves, arugula, chopped lemon and parmesan.

 

Beat until smooth and add salt, pepper and lemon juice. Beat, add olive oil and cool after thickening.

 

Pour the resulting pesto into a bowl, garnish with a slice of bread and serve.
