Finely chop the peeled onion, zucchini and garlic. Put them in a saucepan and pour the broth. Place the pan on the hob and bring the liquid to a boil. Then add the diced melted cheese and the breadcrumbs / croutons.
Cook the soup on low heat until the cheese melts. Transfer to a blender and puree.
Serve with croutons and garnish with fresh green spices according to your preferences.
