How To Cook Zucchini With Eggplant, Garlic And Parmesan - Recipe

Learn how to cook "Zucchini with eggplant, garlic and parmesan". Delicious recipe.

Required products :

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 medium-sized zucchini, cut into thick slices
  • 1 small eggplant, cut into thick slices
  • 1 clove of garlic, pressed
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste

Method of preparation :

  • Heat the olive oil and butter in a large skillet over medium heat.
  • Add the zucchini, eggplant and garlic and stir to cover evenly with the fat.
  • Cook for about 12-15 minutes until softened, stirring occasionally.
  • Remove the pan from the heat and season with salt and freshly ground black pepper to taste.
  • Serve the zucchini and eggplant warm, sprinkled with grated Parmesan cheese.
