Necessary products:

2 pounds of zucchini

500 grams of tomatoes

2 onions

50 milliliters of oil

50 milliliters of olive oil

1 head of garlic

6 grains of allspice

1 teaspoon sugar

1 bay leaf

50 grams of parsley

salt and ground black pepper to taste

Method of preparation:

Wash the zucchini, dry them and cut into large cubes. Cut the onion into small pieces and the tomatoes into pieces twice as small as the zucchini. Mix the oil and olive oil and fry the onions in them until soft. Then add the zucchini and, stirring, wait for them to release their juice. Then add the tomatoes, stir. Stew on high heat for 2-3 minutes, then reduce the temperature. Add the sugar, bay leaf and allspice. Let everything simmer for another 3 minutes and add salt. Stir gently and leave for another 2 minutes on the stove.

Finely chop the garlic and parsley. Add them to the dish, season with pepper, stir and remove from the heat.
