How to dry carrots for the winter

Drying is considered the most optimal and useful way to harvest carrots for the winter. This method of harvesting at home allows you to save the maximum amount of vitamins. Before you dry the carrots, you need to blanched them. Without blanching, dry carrots quickly lose all vitamins and taste. For blanching, it is enough to bring water to a boil and boil the carrots for 15-20 minutes.

After blanching, be sure to chill the carrots in ice water. This will quickly stop the boiling of carrots. When blanching, carrots should not be cooked completely, they should only soften slightly.

Dried carrots can be added when preparing first and second courses, when stewing vegetables and meat. It keeps well and will help diversify your menu.
