Pour the brandy and 1/3 teacup of water over the fruit, place the dish on the stove and let the liquid boil. Cook for 2-3 minutes or until thickened, stirring constantly.
In a suitable bowl, mix the honey with the butter (melted), add the crushed biscuits, and mix thoroughly.
Distribute the mass on the bottom and walls of a form with a diameter of 22 cm, pressing well. Remove and allow to cool completely.
Grind the cleaned cherries with a blender and separate half a cup of the puree for decoration. Put the rest in a tightly closed container and store in the refrigerator.
Pour the ice cream into a bowl and mash it with a fork, then beat with a mixer on low speed until smooth.
Mix it with the cold cherry puree and mix lightly. Fill the cookie tin with this combination and mix in a circle to form a spiral pattern.
Close the container and put it in the freezer for 4 hours.
Before serving the cake, decorate it with the separated puree and whole cherries.
