The delicate and creamy taste of everyone's favorite creme brulee is on the spot. You can easily prepare this dessert at home, and we will tell you how. The main thing is to observe all proportions, and take your time when cooking.

 

Dessert is a creamy mass with a caramelized crispy crust, the dish mainly consists of cream, egg yolks and sugar.

To prepare classic creme brulee (for 8 servings) you will need:

2.5 cups cream 35%; egg yolks from 10 eggs; 1/2 cup white or cane sugar + 1/4 cup white or cane sugar (for caramelized crust) 1 vanilla stick or 1 tbsp. l. vanilla extract.

Tip: use eggs and cream at room temperature. Pick them out of the fridge ahead of time.

 

Turn on the oven to heat up to 150 degrees. Prepare 8 clay creme brulee molds and one large baking dish, in which we will place the dessert molds.

Separate the yolks from the proteins, we do not need proteins.

In a large bowl, beat egg yolks with 1/2 cup sugar until dissolved. The mass should become pale yellow.

If using vanilla extract, then add it to the yolks along with the cream and beat at low speed until smooth.

If you have vanilla in pods, then boil the cream with vanilla seeds for five minutes in a saucepan over low heat, then leave it under the lid for 10-15 minutes, strain, get rid of the seeds, cool. After using according to the recipe: beat with yolks.

Rub the resulting mass through a fine sieve into molds, leaving a centimeter on top. This will get rid of air bubbles in the dessert.

Put all the molds in a large baking dish, pour hot water into it so that it almost reaches the top of the molds. Bake the dessert in a hot oven for 55 minutes.

Carefully remove the baking sheet with the molds from the oven and leave to cool.

Then, remove the creme brulee molds from the water, wipe dry with paper towels, and refrigerate for at least two hours.

 

The caramelized crust is usually made with a flame torch, but you can also simply sprinkle the dessert with crushed brown sugar.

So, cool the dessert in the refrigerator. Sprinkle the creme brulee with cane sugar (two teaspoons per dessert) and heat it with a fire until it melts and turns golden.

The dessert is served cool (after you make the crust, cool the creme brulee in the refrigerator for another 15 minutes to harden the crust). Before serving, creme brulee can be garnished with mint, berries or cinnamon.

If you want to make creme brulee for the future, then do not make a caramel crust, but wrap the molds with cling film and store in the refrigerator for up to three days.
