The product is usually melted butter without lactose and other milk residues (therefore it is suitable for people with lactose intolerance).
Although it is a saturated oil, it differs from other animal fats in its molecular structure. It consists of short-chain fatty acids that are easily digested by the body, unlike fatty acids, which are difficult to process and cause cancer and blood clots.
Ghee (Ghee) contains fatty acids that are 8% less saturated than other dietary fats, making them easily digestible. Protein casein, which raises the level of cholesterol in the blood, is released from the product during its preparation. Ghee also has the antioxidant vitamin E and is the only edible oil to contain vitamin A. Antioxidants help prevent the oxidation of lipids that cause atherosclerosis and DNA damage in cells.
Purified oil contains from 4 to 5% linoleic acid, a necessary fatty acid that ensures the growth and development of tissues and organs of the body. "Essential fatty acid" means that the body cannot produce it on its own and it must be obtained through food.
The melted oil remains fresh for 3-4 months, even at room temperature, does not turn rancid and does not oxidize. It does not burn when fried. This is a great advantage because the oil and ordinary oil when burned become carcinogenic, form free radicals and are difficult to digest.
