Lentils are a legume, well known on the Bulgarian table. It ranks third in protein content of all legumes. In front of her are only soybeans and hemp. The high protein content and low price make lentils an indispensable food product for every table. Although lentils are not considered a complete protein when combined with grains such as rice or wheat, all the necessary amino acids are provided.

 

It is a food distributed not only in our country, but also in many other countries. Lentils are a favorite food of vegetarians not only because of their composition but also because of their taste.



Lentils are a food with a high nutrient density. It contains fiber, vitamin A, vitamin B3, vitamin B4, vitamin C and others. It is a source of many minerals such as iron, potassium, calcium, manganese, copper, selenium, phosphorus and zinc. Lentils are low in calories, which makes it a great choice for people who are struggling with excess weight.

 

The lens comes in different colors - brown, black, red, yellow, green lens. What are the differences?

 

Brown lentils . This is the most common type of lens that we can most often find in stores. When cooked, brown lentils retain their shape unless they are overcooked. Then the berries are peeled. This type of lentil cooks quickly - about 20 minutes and does not require pre-soaking. This variety is suitable for soups, stews, salads, etc.

 

Yellow lens . It has a sweet taste, a yellow shell and a reddish inner body. This type of lentils decomposes very quickly during cooking and therefore it is mainly used for cooking cream soups, purees, hummus and others.

 

Red lentils . The red lens is peeled yellow. It has a bright red to orange color of the berries. Due to the fact that it is peeled, it cooks very quickly. It is suitable for making fine purees, and also as one of the first foods on the baby's menu . Red lentils are suitable to be introduced into the baby's menu around 7-8 months.

 

Green lentils . The grains of this species are larger than standard and flatter. It is very fragrant. The berries are firm and retain their shape during cooking. This makes it ideal for salads, as it does not break down when mixed and stirred.
