Necessary products :

  • 2 average large aubergines, tomatoes and carrots
  • 2 heads of old onions and sweet peppers
  • link fresh parsley
  • 3 large cloves of garlic
  • 1 tablespoon vinegar and sugar
  • 3 tablespoons suitable olive oil or other vegetable oil for frying
  • spices (suitable for vegetables, pepper, salt)

 

Preparation :

Wash the aubergines and peel them if their skins are very hard. Cut into circles, about a centimeter thick, rub them with salt and leave for a while.

Blanch the tomatoes, peel and cut into 6 equal parts each.

Cut the peppers cleaned of seeds into random pieces, do the same with the old onions and carrots.

Fry the eggplants and tomatoes with the peppers separately in olive oil. Fry the onions and carrots until soft, pour a spoonful of vinegar, add sugar, and stew for another 5 minutes.

Mix the vegetables in a pan and sprinkle with mashed garlic and chopped parsley, season to taste.

 

Cook the dish in the oven for about 50 minutes at an average temperature of 180 degrees.

Serve the finished vegetable sauté sprinkled with fresh green spices and enjoy its taste!
