Both Monica Bellucci and Sophia Loren prepare individual bowls of these summer dishes , using seasonal vegetables, parmesan, mozzarella and, of course, seafood in their recipes. Salad with warm pasta and avocado

Boil the fusilli pasta, cut the avocado, parsley and grate the Parmesan cheese on a fine grater. Serve the salad , sprinkling pieces of sun-dried tomatoes on top and dressing with balsamic vinegar.

 

 

Salad with baked potatoes, arugula and salmon

Boil or bake small potatoes in their skins, cut lightly salted salmon and put them in a salad bowl . Add any leafy salad , boiled egg, salt and pepper to the dish . If desired, add capers or kalamata olives.

 

Salad with fried cheese, arugula and vegetables

Fry halloumi cheese on a grill pan and add to a vegetable salad consisting of arugula, tomatoes, peppers and cucumbers. Season the dish with balsamic vinegar, olive oil and a pinch of sea salt.

 

Salad with octopus, potatoes and vegetables

Fry pieces of octopus on high heat, then put boiled potatoes, finely chopped pepper, sun-dried tomatoes and boiled green beans in a salad bowl . Dress with olive oil and truffle and serve garnished with balsamic sauce.

 

Salad with eggplant, tomatoes and mozzarella

Fry pieces of eggplant in olive oil, then lightly saute young zucchini and red pepper in a pan. Mix in a salad bowl together with spinach, red onion, tomatoes and mozzarella. Use olive oil, red wine vinegar, and a mixture of Italian herbs as a salad dressing.

 

Salad with pasta, cheese, capers and sun-dried tomatoes

Boil the pasta and, while it is warm, mix it with capers, pieces of Grana Padano cheese, arugula and sun-dried tomatoes. Season the dish with olive oil, balsamic vinegar and freshly ground pepper.
