Since ancient timesFrom time immemorial, bread and bakery products have been part of the daily diet of the vast majority of the peoples of the world. Most often, bread is baked from wheat flour, but in many places, other cereals dominate, for example, corn, rice, barley, sorghum and others.
As you know, cereal seeds contain a large number of vitamins, microelements and a number of the most important biologically active substances, so bread is a very useful product that is necessary for maintaining the normal functioning of the body. However, bread is bread of enmity. Not all varieties of this product benefit us.
If a few centuries ago, coarsely ground flour, which also included bran, was used to make bread, today flour of the highest grade is mainly used. However, in this case, "premium" is not at all a characteristic of the product's benefit. The nutritional value of such flour is really very high, as it is a source of a large number of calories. However, from the point of view of biological value, there is practically no benefit in it. Modern flour preparation technologies involve a small grinding and several stages of sieving to remove impurities, which precisely contain vitamins, minerals and valuable proteins. In this regard, nutritionists recommend, if possible, to use bread made from whole grain flour, which was obtained by grinding the grain only once. The size of the ground particles of such flour does not exceed 0.5-1 mm. And in appearance, it resembles semolina.
Fortunately, over the past few years, our country has increasingly begun to give preference to grain bread. In view of the inestimable benefit of grain bread, this product is recommended to be added to the diet of dietary and therapeutic food.
What is the benefit of grain bread?Since grain bread contains coarse particles of grains (or whole grains), all the vitamins and trace elements contained mainly in the seed coat are preserved. This product contains a large amount of vitamin B, A, E and PP. In addition, grain bread is rich in the maintenance of such elements as potassium, sodium, molybdenum, phosphorus, iodine, iron and calcium.
Grain bread is especially useful because it contains a sufficient amount of B vitamins (in particular, vitamin B1). At the beginning of the last century, a terrible disease of beriberi appeared in the countries of Southeast Asia, which mainly affected wealthy people. The Polish scientist Kazimir Funk established that this disease develops due to a lack of vitamin B1 (thiamine), which is contained in the husk of rice. And since wealthy people could afford rice flour of the highest grade and polished rice, they thereby deprived themselves of the source of this vitamin, which became the cause of the disease.
Europeans are not at risk of beriberi disease, because in addition to rice, we also eat a number of other cereals. Which have a sufficient content of vitamins of group B. Scientists have established that the most of this vitamin is contained in grain bread, especially if it is prepared from various cereal crops.
Valuable dietary fiberBut the main advantage of grain bread is the high content of dietary fibers, which have a beneficial effect on the activity of the gastrointestinal tract. Dietary fibers improve the state of intestinal microflora, remove excess cholesterol and bind intestinal bile acids that have atherogenic activity. Therefore, regular consumption of grain bread reduces the likelihood of developing atherosclerotic changes in blood vessels.
In addition, fiber has a beneficial effect on metabolic processes in the body and slows down starch, which lowers the glycemic index.
Most people who are going to go on a diet completely exclude bread from their diet, which makes a big mistake. If you eat bread in reasonable quantities, you will not recover from it, but by completely giving up this product, you deprive yourself of a number of vitamins and microelements, in particular B vitamins, which participate in the production of endorphins - hormones of happiness. That is why after 1-2 days after such a diet, a person's mood noticeably deteriorates. One or two pieces of grain bread a day will only benefit you, and the fiber contained in such bread will improve the digestion process, which only has a beneficial effect on the process of losing weight.
