The functional properties of dried egg products are similar to those of fresh eggs.
The advantages of egg yolk powder are that it:
- can be stored at room temperature, while the egg requires a refrigerator
- it is safer for human health in terms of being processed and does not pose a risk of salmonella infection, unlike fresh product
- has a longer shelf life (two or more years), and the egg - a maximum of one month
Dry yolk is used in folk medicine - it is used to treat burns, and in combination with lentil flour - to treat wounds.
Nutritional value: saturated fatty acids, mono- and disaccharides, cholesterol, water, carbohydrates, fats, proteins.
Vitamins : choline, vitamins PP (niacin equivalent), H (biotin), E, D, B12 (cobolomine), B9 (folic acid), B6 (pyridoxine), B3 (pantothenic acid), B2 (riboflavin), B1 (thiamine) ), A, beta-carotene, PP, A.
Macronutrients : sulfur, chlorine, phosphorus, potassium, sodium, magnesium, calcium.
Trace elements : cobalt, molybdenum, chromium, manganese, copper, iodine, zinc, iron.
Possible consequences:
Allergic reaction, including urticaria, eczema, anaphylaxis.
