Each housewife has her own secrets and tricks in her arsenal, thanks to which family dishes are special. Famous chefs use the same tricks, and each of them has their own little life hacks in stock.
We will tell you 10 tricks that famous chefs use. Study and take note of them. Let your dishes be tastier and more beautiful, and the cooking time shorter, and let's forget about spoiled products!
1. To make the cutlets fry faster, press the minced meat a little in the middle. There should be a hole in the center of the patty. So the minced meat is fried faster, it turns out a beautiful and appetizing crust on the outside. Inside, the cutlet remains soft and juicy.
2. If you have overexposed the meat and it has become dry, cut it into slices, salt, and put thinly sliced onion and tomato rings on top. Drizzle with a little vegetable oil. Salt will open the vegetables, they will release the juice. Leave the meat to lie down for about 15 minutes so that it absorbs the mixture of vegetable juice and oil. The meat will again become juicy and very tasty.
3. Before adding juicy vegetables to the salad, salt them a little (just a little bit) and leave them to stand for half an hour. The vegetables will release their excess juice and can be added to the salad at this point. The dish will remain juicy, but will not let out a lot of juice ahead of time, turning into porridge.
4. If you decide to bake a whole piece of meat for the festive table, then this advice will come in handy. To get a beautiful appetizing crust when baking meat in the oven, at the end of cooking, in about 5-7 minutes, grease it with honey or pomegranate juice with a spoonful of cognac. You can also use brown sugar diluted in cognac or water.
5. Cottage cheese casserole is a very tasty dish that is ideal for breakfast or a snack. If you decide to cook such a cottage cheese casserole, then the following life-hack is exactly for you. All ingredients should only be mixed cold. Baking will turn out airy, homogeneous, very tender and, of course, super tasty.
6. Have you decided to cook a rich soup on the broth or just boil the broth with herbs, but during cooking it turned cloudy and took on a not quite appetizing look? Don't worry, everything can be fixed. Throw an ice cube into the boiling broth, the broth will become transparent.
7. In minced meat for rolls or cutlets, add 2 halves of onions: one - raw, and the second - after frying in vegetable oil. Minced meat will turn out juicy, with a delicious aroma of fried onions. For softness, add raw potatoes, grated on a fine grater, to the minced meat.
8. Before frying, marinate any meat for half an hour in a mixture of cornstarch, spices and egg white. We promise you will be pleasantly surprised by the result. Starch in combination with protein will “seal” the meat and prevent it from losing juice during heat treatment. In this marinade, the meat can be stored in the refrigerator for several days.
9. If you want to make the most delicious cake, but you just can’t remember the recipe, take note of a simple formula. Sugar and flour in the dough should be the same amount by weight. By analogy, the weight of eggs and butter should be the same. Everything else is up to you. Believe in yourself, a little imagination - and you will get great homemade cakes!
10. Vinaigrette is a great hearty winter vegetable salad. There is one trick! Add a spoonful of milk and a teaspoon of sugar to the dressing. The salad will "sparkle" with new flavors, because. sugar will set off the taste of pickles, and milk will give a soft creamy aftertaste.
