Cut the rooster into 8 parts, put in a container with a lid and pour wine. Add bay leaf, a couple of sprigs of thyme, coarsely chopped onions and carrots. Place in the refrigerator to marinate overnight.

After 24 hours, remove the rooster pieces from the marinade, leave the marinade and vegetables. Dry the rooster with a paper towel and fry in a pan in oil on all sides until crusty. Put the rooster pieces in a tall saucepan, and in the same pan, fry the vegetables selected from the marinade with a slotted spoon and garlic for two minutes. Fold the vegetables to the rooster, salt and pepper the contents of the pan, pour wine. Bring to a boil, then lower the heat to a low boil and simmer, covered, for about two hours. 

Cut the bacon and mushrooms and fry until tender. Such frying must be added to the finished rooster and served!
