In a bowl, combine the mayonnaise, lemon juice, garlic and black pepper. Store in the cold for 30 minutes while cooking the fish.
Mix the garlic powder, red pepper, crushed chips and bread crumbs in a shallow dish. And place the eggs in another wide bowl.
Dip the fillets in the eggs, then roll them on both sides in the potato pan.
Place them in a paper-lined baking tray.
Bake them for 10-15 minutes until golden and the meat is easily pierced with a fork.
Serve with mayonnaise garlic sauce.
