Some fruits and vegetables are best eaten raw, but this is not true for everyone.

When it comes to fruits and vegetables, it is generally believed that it is most beneficial to eat them raw. Although in most cases this statement is fully valid, there are many exceptions.  
 
Having already considered how it is most useful to eat tomatoes, following the recommendations of nutritionist Helen Bond, we will focus on two more vegetables.

 

Broccoli

It is most useful to consume them raw. Broccoli is considered a superfood, largely due to its healthy content of sulforaphane . Scientists claim that this substance helps in the fight against cancer . 
 
According to studies, it not only destroys pre-cancerous cells and prevents them from multiplying, but also reduces the risk of stomach ulcers and stomach cancer. It is found that vegetables are much more useful in the raw state.
 
 
The reason is that the heat damages the enzyme in broccoli - myrosinase , which is essential for the formation of sulforaphane . Experts advise that vegetables be lightly steamed before eating. But the heat should not be overdone. 

Carrots


Many studies have found that when carrots are cooked, beta carotene levels increase. This substance is kartenoid that the body converts to vitamin A . It is essential for the functioning of many systems in the body - from the metabolism of iron, through vision to the skin and immunity.
