Macaroon

 

This French macaroon has won the hearts of many people around the world. Tender on the inside, crispy on the outside, these buttercream biscuits just melt in your mouth! A beautiful box with such cookies on the table will delight everyone without exception, and besides, it will look great!

You will need:

210 g powdered sugar, 95 g almond flour, 1 tsp. fine salt without a slide, 3 egg whites at room temperature, 50 g sugar, 1/2 tsp. vanilla extract, 2 drops of food coloring of the desired color.

For buttercream:

230 g butter at room temperature, 360 g powdered sugar, 1 tsp. vanilla extract, 3 tbsp. l. fat cream.

 

Mix almond flour, powdered and 1/2 tsp. salt. Sift into a tall bowl.

In another tall bowl, beat egg whites with remaining 1/2 tsp. salt until white foam, then gradually add sugar and continue beating until stiff peaks. Add vanilla extract, beat, then add coloring and beat again until smooth. Then add the dry mixture in 1/3 parts, stirring with a spatula. Continue mixing the dough until you can draw a figure eight from the dough falling from the spatula (the strip should not break). Put the dough into a pastry bag fitted with a round tip.

Line a baking sheet with a silicone mat or parchment paper. Important! To prevent parchment paper from slipping, first apply a drop of dough to the corners of the baking sheet, then glue the parchment corners. Place the macaroons on the parchment: pressing the bag, squeeze out a circle of dough, 3 cm in diameter. Leave at least 2 cm of free space between the circles.

When all the dough is deposited in circles, tap the baking sheet with the blanks on the table 5 times to burst the air bubbles in the dough. Don't skip this step or the cookies won't rise as well when baked.

Leave blanks for 30-60 minutes at room temperature. Then send the cookie sheet to the oven, preheated to 150 degrees. Bake 17 minutes. Ready macaroons will be easily removed from the baking sheet. Cool the cookies on a wire rack.

For the cream, beat the butter with a mixer for a minute, then add the sifted powder, vanilla and a spoonful of cream. Transfer to a pastry bag.

Lubricate the cooled macaroon with cream and glue another cookie, forming a sandwich.

In order for macaroons to "bloom", it is recommended to keep them after cooking for 24 hours in a container with free air circulation. Phew, done!

In the center of the table, you can put several different small vases, jars or glasses with branches of the same color. Just buy a large branch of flowers with small flowers and then cut off small branches. A small but cute accent will surely delight you and your half.

If it's a light evening dinner with wine and snacks, be sure to cook themed canapes. Fruit, whipped cream, seafood appetizers and caviar - by the way. But it is canapes that can be made in the shape of hearts. To do this, you just need a cookie cutter or a special form for making canapes.

The simplest canape can be made with light bread, hard cheese and ham or sausage. Use wooden skewers or toothpicks. Don't forget to brush the bread with butter, melted cheese, or cream cheese.

Cakes with chocolate "Black Forest"

 

For cakes you will need:

3 eggs, 100 g dark chocolate, 100 g sugar, 80 g flour, 3 tbsp. l. cocoa powder, 100 g butter, a glass of canned cherries in syrup, whipped cream for decoration.

In a saucepan, melt butter, chocolate and cocoa until smooth. Cool down.

Beat the eggs with a mixer with sugar until foamy.

 

Mix both masses and add flour. Pour the dough into molds or into one large mold. Bake until dry in the oven at 180 degrees. Cakes are baked for 10-20 minutes depending on the size of the mold. Cool down.

Soak finished cakes with cherry syrup and garnish with cherries and whipped cream.

Chocolate almond cakes

 

Compound:

200 g butter, 200 g sugar, 200 g dark chocolate, 200 g ground almonds (or almond flour), 3 eggs, 1 tsp. baking powder, almonds and whipped cream for garnish.

 

Melt chocolate with butter in a saucepan, cool.

Beat the eggs with a mixer with sugar until white foam. Mix the almond flour with the baking powder and fold into the egg mixture, mixing with a spatula. Then add the chocolate-butter mass, mix. Pour the homogeneous and viscous dough into a form covered with parchment.

Bake for 40 minutes at 160 degrees. Cool down. Cut the cake into squares and decorate with whipped cream and nuts or sprinkles. Enjoy!
