Diet №1 - For Ulcers Of The Stomach And Duodenum

Therapeutic diet №1 is used for ulcers of the stomach and duodenum. The diet aims at moderate (chemical, mechanical and thermal) sparing of the gastrointestinal tract with proper nutrition, reduction of inflammation.

What is a curative diet used for?

Therapeutic diet №1 is used for stomach and duodenal ulcers during the recovery period after aggravation of the disease, for mild exacerbation of chronic gastritis with constant or increased secretion, for acute gastritis in the recovery period.

Purpose of the diet for ulcers of the stomach and duodenum

The diet aims at moderate (chemical, mechanical and thermal) sparing of the gastrointestinal tract with proper nutrition, reduction of inflammation, better healing of ulcers, normalization of the secretory and motor functions of the stomach.

General characteristics of diet №1

The diet is physiologically complete, given the energy value, the content of proteins, fats and carbohydrates in the consumed foods and products. Strong pathogens of gastric secretion, irritants of the gastric mucosa, products and foods that remain in it and are difficult to process are limited. The dishes are prepared mainly in the form of puree, boiled or steamed. Baked foods are without crust, fish and meat are served in pieces, the use of salt should be moderate, cold and hot dishes are excluded, 5-6 meals a day before going to bed to drink milk.

Nutritional composition and energy value of the diet for stomach and duodenal ulcers

Soups
  • Soups made from permitted vegetables (pureed), with carrot or potato broth, milk soups from pureed or very well cooked cereals (semolina, rice, etc.), soups from noodles and pureed vegetables, cream soups from vegetables are useful, cream soups of pre-cooked chicken or other meat, sweet berry porridge with semolina. The flour for the soups should be baked, the toppings should be made of butter, milk-egg mixture, cream.
  • Prohibited foods: meat and fish broths, mushroom and strong vegetable broths.
Meat and birds
  • Lean meats without tendons, skins, skin are allowed. Dishes of beef, lean lamb, chopped pork, chicken or turkey. Cooked foods with pieces of beef, chicken, rabbit. Dumplings, souffle, steamed meatballs. Boiled meat and baked in the oven, boiled tongue and liver.
Fish:

Vegetables

  • Prohibited foods: white cabbage, turnips, radishes, sorrel, spinach, onions, cucumbers, pickled, salted and pickled vegetables, mushrooms, canned snacks.

  • Limited use of dill, parsley, vanilla, cinnamon.
  • Prohibited foods: meat, fish, mushroom and tomato sauces, horseradish, mustard, pepper.
Beverages
  • To drink: weak tea, tea with milk or cream, weak cocoa and coffee with milk, sweet fruit juices (including forest), rosehip tea.
  • Prohibited drinks: carbonated, black coffee.
Fat
  • Permitted for use: unsalted melted butter, refined vegetable oils added to dishes.
  • Prohibited fats: all others.

Example menu 1 for stomach and duodenal ulcers:

  • 1st breakfast: 1 soft-boiled egg, milk puree with rice, tea with milk;
  • 2nd breakfast: baked apple with sugar;
  • Lunch: pureed oatmeal soup with milk, meatballs steamed with carrot puree, fruit mousse;
  • Afternoon snack: rosehip broth, rusks;
  • Dinner: boiled and then baked in milk sauce fish, mashed potatoes, tea with milk;
  • At night: milk.

Example menu 2 for stomach and duodenal ulcers:

  • 1st breakfast: soft-boiled egg, buckwheat porridge, tea with milk;
  • 2nd breakfast: fresh non-sour cottage cheese, rosehip decoction;
  • Lunch: vegetarian potato soup, boiled and baked in béchamel sauce, boiled carrots, oshav (compote of boiled dried fruits);
  • Afternoon snack: wheat bran broth with sugar, rusks;
  • Dinner: boiled fish baked in milk sauce, carrot and apple strudel, milk tea.
