Duck eggs are the most caloric among waterfowl eggs. They contain a large amount of fat and have a specific taste and aroma. The average weight of one piece is 90 grams, which is 1.5-2 times more than the hen. The duck's shell is dense and the color can vary from white to blue-green shades.
In some countries, duck eggs are an expensive delicacy. In Japan and China, they are preserved in different ways, thus retaining their shelf life for months.
To boil them firmly takes about 10-13 minutes in salted water, crumbs are obtained in 6-7 minutes. Before that, warm them to room temperature, this way the protein will be much softer.
The increased fat content in it gives it an oily-viscous texture, which is especially valuable when preparing pastry dough.
Duck eggs are stored in a dark and cool place (in a separate cupboard in the refrigerator) for no longer than 7 days.
In terms of nutrients, vitamins and trace elements, duck eggs are very close to chickens, but the amount of fat significantly exceeds that of protein.
The product also contains vitamins A, E, D, B6, B12, K and folic acid; minerals: calcium, phosphorus, potassium, selenium, magnesium, iron, zinc, sodium; amino acids threonine, isoleucine, leucine, lysine glycine, proline, serine and others.
Vitamin A is needed for good eyesight, vitamin E is important for beauty, folic acid is especially needed by pregnant women, and B vitamins have a beneficial effect on the nervous system and the body in general. Potassium normalizes the work of the cardiovascular system, and thanks to the combined action of phosphorus and calcium accelerates the process of regeneration and strengthening of bone tissue. The sodium in the composition is responsible for the water balance in the body.
Duck eggs are also used in cosmetics, as they are one of the best hair conditioners. Thanks to the many fats in the composition, the product nourishes weak, brittle hair, enriching it with natural substances.
The protein is suitable for the preparation of masks for oily skin, as it is characterized by drying and tightening action, in addition, it shrinks pores and removes shine. For this purpose it is combined with clay and the mixture is applied on the face (several layers), and after drying it is washed off with lukewarm water.
Due to the high risk of salmonella infection, raw consumption of duck eggs is not recommended.
The product is heavy for the digestive system, so pediatricians advise not to give it to children under 6 years of age.
Do not take by people who are allergic to eggs at all, as well as by obese people.
