Previously, amaranth was used in the food industry as an additive in the preparation of cakes, jellies and cereals. In addition, E 123 was used in the manufacture of semi-finished biscuits and beverages. In quantities of 0.05 to 0.5 g / kg it is used together with other colorants for coloring confectionery, ice cream, carbonated drinks, puddings and desserts.

The additive is widely used in cosmetics: in the production of lipsticks, blush and other makeup. It is also used for dyeing paper, various fabrics and leathers.

Effects on the human body

In the 1970s, studies in rats conducted in the United States showed that E 123 caused changes in the liver and affected the body's reproductive functions, increasing the likelihood of developing cancer in rats. As a result of these results, the additive is banned for use in the food industry in the United States because it is classified as a carcinogen.

Also, E123 can be a cause of congenital diseases of the fetus. Therefore, foods containing amaranth should not be taken by pregnant women and children.

The substance causes a runny nose, allergic reactions (urticaria, itching), adversely affects the kidneys and liver. The food supplement E 123 is contraindicated for people who are sensitive to aspirin; not to be used by children because it causes extremely active behavior.

In EU countries, this substance is not banned for use in the food industry because its carcinogenic effects on the human body have not been proven.
