The food additive E150c (ammonia caramel) belongs to the group of caramel colors - E150. Gives different shades of food - from pale yellow to deep dark brown. It is approved for use in the United States, Russia, Ukraine and a number of EU countries.

The food additive E150c (ammonia caramel) belongs to the group of caramel colors - E150. Ammonia caramel is a natural or similar to the synthetic colorant, which is obtained by thermal decomposition of sugars. The main difference of the additive E150c from the other dyes in the group is that "ammonia technology" is used for its production, ie ammonium compounds are added when heating the sugars. Thanks to its saturated color and heat resistance, E 150 gives different shades - from pale yellow to deep dark brown. To obtain a deep brown color, it is recommended to add up to 4% colorant to the amount of flour. The food additive E150c is approved for use in the food industry in Russia, Ukraine and a number of EU and US countries.

Main features of the E150c additive:

  • Color - dark brown;
  • Taste - sharp, bitter;
  • Consistency - powder, thick liquid or solution;
  • Smell - of burnt sugar.

Properties of ammonia caramel:

  • Stabilizes product quality;
  • The colorant dissolves well in water but does not dissolve in ethyl alcohol;
  • Resistant to high temperature changes, withstands temperatures up to 150 degrees Celsius;
  • Not sensitive to light and oxidation;
  • Economical to use;
  • 99% dry (no moisture).

The whole group of E150 supplements belongs to melanins - complex pigments that are released from plant tissues. They have radioprotective properties and protect the body from radiation damage, the effects of radiation and mutations caused by it.

The supplement E150c can cause gastrointestinal disorders and diseases if the maximum allowable daily dose is exceeded - 150 mg per 1 kg of body weight.

Use of ammonia caramel

 
Ammonia caramel as an additive E150c is used for coloring many types of food:

  • vinegar;
  • fermented dairy products - kefir, yogurt;
  • alcoholic beverages - wine and beer;
  • bitter soda drinks - carbonated water, punch, iced tea, cola;
  • lemonade;
  • cereals - rice, corn cornflakes, extruded corn sticks;
  • canned fruits and vegetables;
  • jams and marmalades;
  • meat products - sausages, sausages, cooked sausages, pate;
  • sauces;
  • canned soups.

This colorant is also used in the production of animal feed. Caramel colors are used in the manufacture of biscuits, crackers, cakes, dark (chocolate) waffle cars.
