E223 (Metabisulfite) is a preservative, antioxidant and disinfectant. Represents white or yellow crystals, can be in the form of white crystalline powder with a characteristic odor of sulfur. The melting point is 150 ° C. The preservative dissolves well in water, in alcohol - weakly, and does not dissolve at all in fats and oils. It is obtained by reacting sodium carbonate with sulfur dioxide with the addition of water. The permissible daily dose per kilogram of body weight is 0.7 mg. There are no side effects - it is oxidized in the liver to safe sulfates and excreted in the urine.

Use

Basic meanings of E 223:antioxidant, coolant, preservative, bleach and restorative. Used in jelly fruit extracts, liquid pectin, dried, canned and frozen vegetables, fruits, in potatoes and mushroom products, marmalades, jams and jams with low or no sugar and other similar products, soft drinks, beer, gelatin, candy and confectionery with a large amount of sugar, cephalopods, spices based on lemon juice, salted and dried fish, sausages. E 223 finds good application in winemaking: it helps to bind acetaldehyde, which stabilizes the color; contributes to obtaining the necessary oxidative and reducing potential, which increases the stability of wine at the microbiological level; prevents various bacterial changes in the wine. It is also used in cosmetics.

Impact on humans

The supplement is harmful if ingested. Contact with acids releases toxic gas, which can seriously damage the eyes. The preservative can cause the development of allergic reactions, cause severe diseases of the gastrointestinal tract. In addition, the carcinogen destroys vitamin B1, so E 223 is defined as a harmful dietary supplement.
