Sodium acetate is a salt of acetic acid and is approved for use in the food industry as an additive in the group of preservatives. Obtained by dry distillation of wood, refers to the salts of weak acids, which dissolved in the future, can be used to maintain constant pH values.
Sodium acetate is used in the preparation of various dyes and such chemical derivatives as: vinyl acetates, acetic anhydride, in the dyeing and tanning of leather. In medicine it is used as an alkaline agent, in construction - it prevents the freezing of concrete during transportation, etc.
Sodium acetate is a strong allergen. It is absolutely contraindicated for people with kidney disease. As the substance is mainly used for industrial and chemical purposes and is a chemically active derivative, in order to avoid harmful effects on humans, experts advise people who work with it to strictly follow all safety measures and occupational safety rules of the respective factory.
In the household and food industry, sodium acetate is the end product in the reactions of ordinary baking soda and vinegar. Used for canning and cooking, it may be part of some medicines.
In reasonable quantities, the substance is harmless and non-carcinogenic. It is allowed as a dietary supplement in almost all countries around the world. Acetates can only be hazardous in industrial concentrations.
