Propionic acid is a clear liquid with a pungent odor. It is naturally obtained by fermentation of carbohydrates. It is the end product of the metabolism of the bacteria Propionibacterium, which is contained in the stomach of ruminants and in the human body.
The additive E 280 is used in the food industry in the production of bakery products as a preservative, which prolongs their shelf life and prevents the development of mold and bacteria. In pharmacy it is used as a component of drugs. In the chemical industry it is used as a fertilizer and solvent.
Propionic acid is dangerous to human health only in concentrated form: severe skin burns are possible; when ingested, it forms wounds and ulcers of the digestive system. If the safety rules are followed when using concentrated propionic acid, the additive is considered safe for humans. The preservative is not a toxic substance, but when it enters the body through food, it oxidizes quickly and is released from it. However, according to some independent experts, this supplement is carcinogenic and can cause cancer. People prone to cancer should not consume products containing this type of supplement at all.
