Malic acid (E296) is a colorless crystal that dissolves rapidly in water and alcohol. At a temperature of 100 degrees it melts easily. Initially, the acid was extracted from unripe apples and has the properties of hydroxy acids, its salts are called malate. The additive E 296 is one of the most important components for the metabolism of living organisms, where it participates in the form of malate. Malic acid is found naturally in unripe apples, green grapes and other similar plants with a sour taste. This acid is found in tobacco in the form of nicotine salts.
The addition of E 296 to foods helps maintain certain pH values in their composition. The acid reduces the pH content of foods, the use of bases increases it.
Malic acid is used in the production of food products to regulate acidity or to give a slight sour taste. It is used in wine production, in confectionery, in making fruit drinks. In pharmaceuticals, on the basis of this acid, some drugs are made (laxatives, for the treatment of tendons, against hoarseness), in cosmetics it is used as a component of cosmetics, it is also a component of hairspray.
