Food supplement E 310 belongs to the group of antioxidants or acidity regulators. It is a complex ester of gallic acid (propyl ester of gallic acid), which occurs in nature and is part of lignin and tannins. It is a crystalline powder with a white-yellow color, odorless, with a slight bitter taste, does not dissolve well in fats, and dissolves best in alcohol (especially ethyl). The substance does not occur in nature, it is obtained artificially by esterification of gallic acid with ethyl alcohol.
Propyl gallate is widely used in the food industry. Galates (salts of gallic acid, including propyl gallate) have two parts of the molecule (fat- and water-soluble), so they are often used as antioxidants for fat emulsions, for example in the production of mayonnaise. It is also used in the preparation of frying fats, dry concentrates for confectionery, sauces, chewing gum and more. Used for impregnating packaging for products containing fats, such as margarine. In other areas: in the preparation of cosmetic creams and lotions and as an additive in industrial and motor oils.
Upon entering the body, propyl gallate breaks down in the intestine. Much of the gallic acid is excreted in the urine as a methyl derivative. The permissible daily dose of E 310 is about 2.5 mg per 1 kg of body weight.
The substance acts on the body similar to the action of the female sex hormone estrogen.
The food supplement E 310 causes asthma, stomach irritation, allergic skin rashes, so it is forbidden to use in the preparation of baby and children's food. Also beware of people with hypersensitivity to aspirin.
Some scientists have suggested that propyl galaxies are able to cause the growth of malignant tumors, but this issue has not yet been studied.
