Sodium citrates belong to the group of antioxidants and are used in the food industry as an emulsifier and stabilizer. They have a sour-salty taste, are a white crystalline powder, can be stored for a long time, dissolve well in water, and in alcohol solubility is difficult. The substance is not explosive.

The properties of the supplement were discovered in 1914, it was used as an anticoagulant in blood transfusions. Since then it has been used in medicine and in the food industry.

E 331 is not characterized by toxic or other adverse properties, it is allowed in all countries around the world.

Use

The range of application of sodium citrates is wide:

  • In the food industry - in beverages (especially in those that should taste like lemon), jellies, souffles, yogurts, melted cheeses, in powdered and adapted milk; it is also used as a spice.
  • In medicine and pharmacy - it is added to fast-dissolving drugs, is used in the treatment of cystitis and some other infectious diseases of the genitourinary system and as a laxative. It is used in blood donation because it helps the blood not to clot for a long time. With the help of E 331 the acidity is reduced, respectively the acids are removed.

There is no set daily maximum allowable for the use of the additive.

Impact on humans

The food supplement is defined as safe for human health and life. The adverse effects of its use are minimal. Inhalation of the substance in dry form may irritate the respiratory tract. Nausea, loss of appetite, stomach pain and high blood pressure may occur during the use of medicines containing E 331. At the same time, drugs that include sodium citrate in its composition help fight hangovers, heartburn, inflammation of the urinary tract and kidneys.
