The food additive E 350 is intended for use as an acidity regulator and humidifier. The substance is an odorless white crystalline powder. Natural sources are the fruits of rowan, apples, raspberries - these plants contain malic acid, which is one of the most important intermediates that help the metabolism in the cells of all living organisms. The additive is obtained from ammonia alcohol and DL-malic acid. Impurities: fumarates, maleic acid.
In practice, sodium malate is not used. It is approved for use as an acidity regulator in jams, canned fruits, citrus marmalades and jellies to maintain a pH of 2.8 - 3.5.
There is no set maximum daily dose for the substance; not recommended for addition to baby food. There is no reliable information on the harm of E 350 to human health.
