Characteristic

The food additive E410  is a stabilizer that is used to preserve the consistency of the product and to increase its viscosity. It is approved for use in the food industry in all countries around the world. E 410 has the property to preserve the taste of food. It is obtained from Mediterranean acacia. In terms of properties, locus bean rubber is compared to guar gum, which does not dissolve in cold water. The substance is a polymer of non-ionic molecules and dissolution must take place when the liquid is heated. When cooled, the rubber significantly slows down the crystallization of ice and forms a gel with a certain structure. It is an active substance used to mix products that do not normally have this capability. 

Use

Locus bean gum is used in the production of frozen desserts and ice cream, as well as in the preparation of sauces, cheeses and in the manufacture of bakery products. E 410 is used as a gelling agent in:

  • various desserts;
  • melted cheeses;
  • sauces, ketchup;
  • canned mushrooms and vegetables;
  • canned meat and dishes;
  • bakery products;
  • all kinds of ice cream.

Impact on humans

The maximum permissible daily dose of the supplement is not more than 20 g / kg body weight. In the food industry it is used together with other similar stabilizers. People who have problems with the gastrointestinal tract should be careful when consuming products containing E 410 . The substance is not an allergen, does not cause irritation in direct contact with the skin and mucous membranes, is allowed to be added to food, helps to reduce blood cholesterol levels and gives a feeling of satiety.
