Xanthan gum is a stabilizer that is used to maintain the consistency and increase the viscosity of the products. The additive is approved for use in the food industry in all countries of the world. Refers to natural polysaccharides and polysaccharide biopolymers. It is obtained as a result of the activity of bacteria from molasses and sugars.

The main and most important qualities of E 415 are greater strength and extensibility. It mixes well with various substances, forming stable suspensions and elastic soft gels.

Use

Thickeners are used to stabilize beverages such as chocolate milk because cocoa particles can precipitate.

E 415 is used in the food industry in the production of:

  • dairy, meat and fish foods;
  • milk drinks containing fruit as a stabilizer;
  • ice cream and cream to obtain a creamy consistency;
  • confectionery and jam;
  • for ice crystallization;
  • for moisture retention and for the preparation of saline solutions in meat processing;
  • as a gelling agent.

Impact on humans

There are no restrictions on the amount of the supplement that can be used, but with the accumulation of high concentrations of it in the body, a feeling of bloating and flatulence is possible.

Foods that contain E 415 can be consumed by vegetarians. The substance is not an allergen, used in the manufacture of baby and diet foods.
