Rubber tare is a stabilizer designed to preserve the viscosity and consistency of food. Pectin is characterized by a similar effect. The additive E 417 belongs to the group of foam stabilizers, which are good emulsifiers and are added to the liquid products for foam formation and preservation.
The main and most important properties of the substance are its greater strength and extensibility. The rubber combines well with various substances and forms stable suspensions and elastic gels. The properties of gum tare can be compared to those of guar gum. The solubility of the substance in water is good, but the heated solution of rubber tare is more important for viscosity and makes it possible to stabilize the finely dispersed particles for a longer time.
